Where It All Began

The truth is..

I’ve always absolutely loved my food. For as long as I can remember. My parents always told me the same thing.

My passion for cooking started around aged 8, baking different types of cakes at home using mums’ collection of recipes.

These recipes we’re written down from books and cut-out’s of magazines. As far as I was concerned at the time, this was THE definitive collection of incredible recipes!

This was the beginning where I got completely hooked.

Into The Fire

At 15, I got a job in a busy café on the high street. I still remember the smell of frying food, fresh coffee, and steam rushing out of the dishwasher.

Later, I worked in a gentlemen’s club in an upmarket part of my hometown. 

At one point, I found myself responsible for a wedding for 70 people. I pulled it off, just about, but it taught me one thing very quickly: I needed to go back and learn properly.

I threw myself into award winning restaurants to learn the basics. It wasn’t that long before I was mastering the skills.

Earning My Stripes

I then had the basic skills imprinted, if I made a potato dish, a sauce, or a dessert 50+ times, I tended to get pretty good at perfecting it!

My cooking took me all over the world.

Preparing food in top restaurants, going on to cook for exclusive small lunches for private banking customers.

No regrets.

Sharing The Craft

Earlier, I mentioned my mom’s recipe collection, which I considered the holy grail of cooking information.

Now, my mission is to recreate this invaluable resource. I aim to provide a comprehensive instructional guide that equips you with the skills to cook at a professional level in your own home.

Why recipes are not enough...

Recipes can tell you what to do, but not always what to look for, feel, smell, adjust or understand.

Recipes are the map but technique is knowing how to drive the bus.

The Reward

The real reward is not just learning a few impressive recipes.

It is understanding what is happening in the pan. Knowing why something works.

 Learning how to use your eyes, your hands, your nose, your taste, and your judgement.

That is what I teach. 

Not just steps to follow, but the skills behind them, so you can cook with more confidence, more instinct, and more freedom in your own kitchen.
